Be forewarned - there is little substance to this post - I'm just trying to be blog-consistent while on an easier rotation...
This weekend was less than exciting, but really quite perfect (even if it did consist of errands, groceries, laundry, house-cleaning, etc). After busy weeks at work, we both had the weekend off and spent it catching up on life, which was nice. The highlight? W v. E cook-off Round 1. The challenge? Pork tenderloin.
The prize? Choosing the restaurant on our next date night.
The winner? It was a tie (lame, we know - they were both too delicious to choose). You may be wondering if it was really necessary to cook two full tenderloins, and while we do have the appetites of champions, it was actually because both needed to be cooked for safety reasons (I am very particular about our meats - who wants to risk food poisoning?). Combined with this (below) and a great salad, it made for a delicious homemade meal.
(Clean and cut okra. In a mixing bowl, add olive oil, seasoning salt, garlic powder, and black better. Stir. Pour on greased cookie sheet. Cook at 425 for 10-12 min. Delish!)
You may also be wondering if this was really the most picture-worthy moment of our weekend, and if so, you would be correct. No complaints on this end though - we do not take for granted weekends where we can relax, not work, and enjoy each others' company.
Who could resist this little face?
As Walker consistently points out, clearly not me. I can't stand to throw out leftovers, so this 10-lb pup tends to eat like a champ. She may or may not have also enjoyed a dinner of pork tenderloin and roasted okra.
And just for laughs, I'll leave you with this awkward family photo...
Attempt-at-self-portrait = FAIL.
Happy week folks!
